THE TREATISE ON GRAPE SCALDING AND LYE RAISINS: AGRICULTURE, HISTORY AND CULTURE

Presentation of the book The Treatise on Grape Scalding and Lye Raisins: Agriculture, History and Culture by the author, Josep Marqués Costa. This book opens a new line of research dedicated to the study of the scalding of Valencian grapes, placing it within the context of an ancestral shared tradition that has endured for centuries in several regions of the Mediterranean and the Middle East. It also shows how this practice has adapted and expanded to other parts of the world. The study debunks the notion that this technique was exclusive to the region of Marina Alta—an idea erroneously upheld by some authors. The research demonstrates that grape scalding is a technique of great historical relevance that has survived in specific micro-regions of the planet where this pre-treatment aided the drying process. For the first time, comparisons are made with other parallel ethnographic practices, providing a more global and integrated understanding of this tradition. Speakers will include Rosa Seser, president of IECMA, and Massu Sentí, director of the Ethnological Museum of Dénia.
